- Keep it simple. Most days I don't use a recipe. Our suppers often consist of a meat and large salad and/or roasted or sautéed vegetables. I usually use the same quick salad dressing (no need to measure ingredients) - see previous post. To spruce it up a bit, I throw in whatever I have on hand like sunflower seeds, pecans, raisins, hemp seeds, orange segments, etc. When roasting almost any vegetable, just add melted coconut oil, sea salt and pepper. That is my favourite seasoning. Add some chopped garlic to make it even better!
- Prep day once a week. I grocery shop about once a week. I load up on fruit and vegetables and when I get home, instead of putting it all in the fridge, I wash and cut it. For me it works best to do it right away, otherwise I never get to it and am too lazy to wash up a couple carrots to have as a snack or to make a salad for lunch. If your fruits and vegetables are ready to eat, your chances of eating them rather than something processed will greatly increase. Have veggies ready to snack on, lettuce or whole salads ready to go, and veggies for roasting washed and ready. This prep usually takes me a couple hours but it saves so much time later in the week.
- Batch cook. Pick a day every once in a while where you have the kitchen to yourself..and hopefully this kid(s) out with daddy. Find a few healthy recipes and double, triple or quadruple them! Eat one of them for supper that night and freeze the rest. My favourites freezer meals are meatballs, chilli, and soups. Instead of doing a batch cooking day I often just double or triple a recipe that I am making for supper. You do this a few time and you have a nicely stalked freezer.
- Don't buy junk. If there is junk food in my fridge or pantry I am either likely to eat it or be tormented by it. If your husband doesn't eat like you, ask him to keep his junk food where you don't see it everyday (in a basket in the pantry or possibly in the basement??).
