Salmon Spring Rolls or Sushi with garlic bok choy - we are out of salmon fillets so I might try canned salmon and/or leftover chicken. *I like to buy my salmon from Costco in the freezer section. It is wild alaskan salmon which is a better choice. Make extra for lunch!

Roasted Squash and bone-in chicken or full roast chicken - chop up squash into cubes, melt coconut oil and pour over and toss, add s+p and bake at around 375. Butternut squash is my favourite. For chicken, just sprinkle on your favourite herbs or spices. I like thyme and rosemary. Make a little extra chicken for tomorrow's meal.
Chicken salad with leftover chicken. Video version of recipe here. Veganaise is delicious. The kind I bought uses expeller pressed canola oil which is not the healthiest of oils but better than the regular chemical treated canola oil. You could also sub in mayo.
Pre-make snack bags of raw vegetables (for about 3- 4 days to keep them fresh)
Pre-make small bags filled with berries or other fruit. Or throw frozen berries in a couple jars for snacks.
Boil eggs for a quick breakfast or snack or for protein on a salad
Have oranges, apples etc sitting in a nice dish or basket on the counter where they are in sight.
Make individual salads ready or one large bowl full of salad.
Make 1 home-made dressing and store in a glass jar. I usually throw together olive oil, apple cider vinegar, s+p, garlic powder, bit of mustard powder, and small amount of maple syrup. You can find more dressing recipes on my Pinterest page.
Wash and chop most of your veggies ahead of time. For example, if I had broccoli and cauliflower for stir fry that week. I'd wash and chop it all and throw it in a large ziplock bag. For carrots and celery, to keep I wouldn't chop them up ahead of time.
Wash greens (kale, spinach, swiss chard, cilantro) for green smoothies
I like to have a snack "bin" in the fridge so if I need a snack or Ashton is hungry I can bring it out and she can choose. I usually fill it with bags of fruit, raw veg, nuts and dried fruit, cheese sticks (I cut sticks from a block of cheese and wrap in plastic wrap. Cheaper and more natural.)
