I've avoided meal plans for the past couple months because of the intense pregnancy cravings and aversions that would change from day to day. Now I feel like I'm sort of back to normal. I have found though that I am craving more "normal" food (more carbs, more comfort food). I crave things like subs and lasagna. Which before I was fine not eating any of that. I am trying to adjust some of my old favourites so they are a bit healthier and less inflammatory. For my McChicken Sandwich craving....a homemade gluten free bun with a almond crusted chicken breast and veganaise! A bit more work than the drive thru but worth it in the end.
I don't follow a recipe for this. Use whatever vegetables you have in the fridge. Some of my favourites are broccoli, celery, carrot, peppers and snap peas. Cook the chicken first, add in vegetables and throw in some soy sauce or gluten free tamarin. You want them to still be slightly crisp so don't overcook. Some lightly toasted nuts or seeds are a nice addition.
