Burrito Bowl. You really can throw whatever in this bowl. I always do rice or quinoa, chickpeas or black beans, and any veg. For a dairy free sauce I use a bit of either veganaise (found refrigerated in natural food section of grocery store) or the "cheese" sauce from the lasagne recipe...or simply some olive oil on the rice and top the dish with salsa is also delicious!

Lasagne. This recipe can be made two ways; low carb using crepes or using gluten free noodles. This is one of my favourite recipes of the last 3 years. If you want to make it quicker and don't mind carbs, use ready to bake brown rice noodles. I like to triple the recipe so I have a few lasagnes for the freezer. It's really not that much more work and you have 3 (actually ends up being more) meals!

1/2 banana (frozen)
2 tsp ground flax or chia
2 tsp hemp seeds or any nuts or seeds (soaked overnight/rinsed)
spinach (couple handfuls)
optional: cucumber, celery
liquid: almond milk, coconut milk or water
I'm still loving the chocolate mint smoothies (reminds me of Christmas and thin mints) but for some variety, this one is great too.
